Hot homemade cornbread just seems to belong on the wooden picnic table with barbecue or steaks grilled on the pit, or chili or red beans.  Of course we love our Texas Campfire Cornbread Mix just like it says to make it on the package, but sometimes we like to gussie it up with some good shredded sharp cheddar cheese and green onions – especially when there’s company for supper!

Ingredients

Serve 4 to 6.

1 pkg. Fredericksburg Farms Texas Campfire Cornbread Mix
1-1/2 cups (6 ounces) shredded sharp cheddar cheese
5 green onions, sliced thin, including green tops

Instructions

Prepare the Fredericksburg Farms Texas Campfire Cornbread Mix according to the directions on the package, only substitute a 10-inch skillet in place of the 9-inch one specified on the package.  Stir the shredded cheese and green onions into the prepared batter, stirring just to blend evenly.  Turn the batter out into the prepared skillet and bake according to package directions.  Serve hot.

In Texas the early settlers came to like the corn-based breads prepared by the Native Americans and cornbread became a staple of our Texas way of eating. Our Texas Campfire Cornbread mix is a tasty blend of ground cornmeal and a little hint of jalapeno that makes a moist and flavorful bread that’s a required accompaniment to a big bowl of chili.
