What is your favorite summertime meal?
I asked around and heard about these favorites from some of our staff. Barbecued Chicken and Street Corn, cooked outside on the grill accompanied by Watermelon Margaritas.
Another person offered up Beef Kebabs with Onions, Bell peppers and Mushrooms cooked on the skewers along with the meat accompanied by a cold frosty beer.
Still another suggested Grilled Ahi Tuna with Cucumber Salad and a fresh Pineapple and Lemonade.
All of this is starting to make me awfully hungry…so before I get too distracted, I will offer up my own favorite meal. It would be my Mamaw’s Fried Chicken with Cream Gravy and Homemade rolls, and sides of any freshly picked garden vegetable like black-eyed peas cooked with bacon, fried okra, yellow squash, and creamed corn. She always had the best tall glasses of sweet iced tea and for dessert a homemade 6-layer strawberry shortcake. Amazingly, it was all cooked without benefit of air fryers, crock pots, Cuisinart processors, or Insta pots and it was delicious.
