MOJO CHICKEN

2 whole boneless chicken breasts
Goya Mojo Criollo Marinade 1 T. + 1 t. olive oil ½ cup chopped scallions 1 jar Fredericksburg Farms Fredericksburg Peach Salsa |

Preheat oven to 450 degrees. Marinate chicken in enough mojo to cover for 30 minutes (refrigerate if longer). Pat chicken dry. Place 1 T. oil in an ovenproof skillet over medium-high heat. Sear chicken 2 minutes on each side Place in oven for 7-8 minutes. Remove from pan and keep warm. Place pan over medium heat, add 1 t. oil and saute scallions for 1 minute. Add Fredericksburg Peach Salsa and heat through. Pour over chicken and serve.
