SPINACH, ORANGE & ONION SALAD WITH CITRUS-GARLIC DRESSING

Fresh picked spinach with its slightly crisp texture straight from the garden to the salad plate is one of Mother Nature’s best creations. And, of course, not only does it taste so good, it’ so good for us! There’s a winning combination. We think you’ll love this tasty salad with a flavor-packed dressing created around our Citrus Garlic Bread Dipping Mix. Go ahead and indulge. Remember, it’s good for you!

Ingredients

Serves 6-8.

10 ounces fresh spinach leaves
1 (11-ounce) can mandarin orange sections, drained
½ small red onion, halved crosswise, thinly sliced
2 tablespoons toasted skin-on sliced almonds

Citrus-Garlic Dressing:

¾ cup sugar
1 teaspoon Fredericksburg Farms German Stone Ground Mustard
⅓ cup raspberry-flavored vinegar
2 tablespoons Fredericksburg Farms Citrus Garlic Bread Dipping Mix
1 cup canola oil
Sea salt or kosher salt to taste

Instructions

Remove large stems from spinach leaves; tear leaves into bite-size pieces. Place in a large salad bowl; add orange sections, onion, and almonds. Toss gently to combine. Cover and refrigerate until ready to serve. Make the dressing by placing all ingredients except canola oil in work bowl of food processor fitted with steel blade. Process until well blended, about 15 seconds. With machine running, add the canola oil through the feed tube in a slow, steady stream. Add salt, if needed. Process an additional 30 seconds to form a smooth emulsion.

To serve, drizzle desired amount of dressing over the salad and toss well. Serve at once.
