Recipe: The recipe is as follows: Get a split chicken, or spatchcock a whole one, and rub it thoroughly with Hen Scratch Poultry Rub. Sear it for about 90 seconds on each side and then set it on indirect heat, skin side up, at around 325 or 350 degrees.
Next, combine ½ bottle of Peach Pecan BBQ Sauce, ½ bottle of Honey Red Grilling Glaze, and a large tablespoon of Dusseldorf mustard with a splash of apple cider vinegar, and mix well. You want to sauce your chicken every 20 minutes or so until you hit an internal temperature of 165 degrees, this normally takes about 1.5 to 2 hrs. It is easy to tell when you get close because the leg bones will start to pull back on the drumsticks.
